Serving for 3 to 4
1) Place skillet on heat
2) Add 1.5 oz of olive oil to skillet
3) Add 1.5 oz vegetable oil to skillet, heat skillet till oil become hot
4) Add 3/8 lb. of cut okra evenly across skillet / cover skillet / reduce to low temperature
5) Cutting 2 ears of sweet corn off cob: http://whatscookingamerica.net/corn.htm / Stir in cut corn to skillet / Recover skillet.
6) Thin slice ½ of a Vidalia or sweet onion (can replace with 1 med. size, thin sliced bell pepper) / Stir in slices / Recover skillet
7)Slice 1 med. yellow squash / Stir in sliced squash / Recover skillet / Allow vegetables to cook
8) Stir in one, 6oz can of tuna (oil preferred) / Recover skillet / allow to cook 5 minutes
9) Stir in 6oz of shredded, cheddar cheese (sharp) / Recover skillet / allow to melt throughly
10) Serve with saltine and Concord wine (8oz per person) or concord grape juice
